Ingredients
  

  • ¼ cup fresh lemon juice
  • cup olive oil
  • 2 tablespoons dijon mustard
  • 2 teaspoons honey
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • In a small bowl or a jar with a tight fitting lid, combine ¼ cup fresh lemon juice.
  • Slowly pour in ⅓ cup of olive oil while continuously whisking the mixture. If using a jar, you can secure the lid and shake the ingredients to emulsify.
  • Add 2 tablespoons of Dijon mustard to the mixture. Dijon mustard not only adds a tangy flavor; but also helps in emulsifying the dressing.
  • Incorporate 2 teaspoons of honey to balance the acidity and add a touch of sweetness to the vinaigrette.
  • Sprinkle 1 teaspoon of dried oregano into the mix. The dried oregano will impart a delightful herbaceous flavor to the dressing.
  • Season the vinaigrette with salt and pepper to taste. Start with a pinch of each and adjust according to your preference.
  • Whisk the ingredients together thoroughly or secure the lid on the jar and shake until the dressing is well combined.
  • Taste the vinaigrette and make any necessary adjustments. If you prefer a more pronounced flavor, you can add extra lemon juice, mustard, honey, or seasonings.
  • Once you achieve the desired balance of flavors, transfer the vinaigrette to a dressing bottle or jar.
  • Store the vinaigrette in the refrigerator for up to two weeks. Before each use, give it a good shake to blend any separated ingredients.
